How long is the wait at Jinbeh?
Wait times at Jinbeh vary significantly by time and day. With a reservation, you should be seated within 10 minutes of your booked time. For walk-ins: weekday lunch and Sunday-Thursday dinner are typically immediate or under 15 minutes; Friday and Saturday 6pm-9pm walk-ins can wait 30 to 60 minutes for a hibachi table; the sushi bar usually has shorter waits than hibachi. A typical hibachi dinner runs 60 to 75 minutes from seating to check, and tables turn after that. If you are walk-in only on a weekend night, arriving at 5pm (right at open) or after 8:30 pm minimizes the wait. The host can text you when your table is ready.
Hibachi tables seat groups of 6 to 10 communally, your party plus other parties fill the grill, so the wait can depend on how easily we can pair your group size with other parties waiting. A 2-top waiting for hibachi often waits longer than a 4-top because we need to find compatible partners. If you want a private hibachi table, the wait is longer and you may need to reserve. The sushi bar and dining tables (non-hibachi) have shorter waits. Reservations through OpenTable solve almost all wait issues, they take less than a minute to book and guarantee your seating window. Weekend dinner reservations 1-2 weeks out are usually still available.
