Is Jinbeh worth it?

Independent reviews mention a few quality signals that distinguish Jinbeh from competitors. Consistent food quality from long-tenured chefs is one. Some competitor reviews say food quality has "gone downhill" after corporate buyouts, where centralized purchasing and rotating staff replace local craft. House-made sauces and proteins that match the menu description is another. Some local hibachi competitors have had recurring complaints about imitation crab where the menu said real, different steak cuts than advertised, and even the same steak being served across multiple menu items. At Jinbeh, every sauce is made fresh in-house (Yum Yum, signature mustard sauce, garlic butter prepared the day before), and proteins are sourced and labeled honestly. A serious sushi program that holds its own alongside dedicated sushi restaurants is a third. The head sushi chef has been at Jinbeh for nearly 30 years and co-created every signature roll on the menu. Reasons Jinbeh might not be "worth it" for some guests: if you want all-you-can-eat dining (Jinbeh does not offer AYCE), if you want corporate-chain consistency, or if you are on a strict budget below the lunch-special price point.
