While Jinbeh is famous for the hibachi show, our sushi bar is just as serious. Fish arrives on a regular delivery schedule, and our chefs slice each piece to order, so your nigiri, sashimi, and rolls are made fresh when you sit down. The bar has been led by Fuji-san, our head sushi chef, since 1993. His traditional Japanese training shows in every clean cut, and the original Jinbeh Special Roll started as his signature. Whether you are new to raw fish or a longtime regular, there is a roll, a slice, and a chef recommendation waiting for you at both our Frisco and Lewisville locations.

Behind the Bar: Chef Fuji-san
Our head sushi chef, Fuji-san, has stood behind the Jinbeh sushi bar since 1993. He trained in the traditional Japanese style, and that discipline shows in the precision of every cut and the balance of every roll. The original Jinbeh Special Roll began as his creation and is still a guest favorite today.

Is the sushi at Jinbeh fresh?
Yes. Our fish arrives on a regular delivery schedule and our sushi chefs cut each piece to order, so rolls and sashimi are made fresh when you order them, not pre-sliced. Ask your chef which selections are at their peak that day. Jinbeh has run a serious sushi program alongside our hibachi since 1988.
Who is the head sushi chef at Jinbeh?
Fuji-san has led the Jinbeh sushi bar since 1993. Trained in the traditional Japanese style, he is known for precise cutting and clean flavor, and he created the original Jinbeh Special Roll. You can read more about him in our chef profile.
Does Jinbeh have sashimi and nigiri, or just rolls?
Both. Alongside classic and signature rolls, our sushi bar serves nigiri and sashimi cut to order from fresh fish. If you are new to sashimi, ask your chef for a recommendation based on what is freshest.
Can I sit at the sushi bar?
Yes. You are welcome to sit at the sushi bar and order directly from the chefs, which is a great way to try their recommendations and watch the rolls come together. Reservations help on weekends, and walk ins are welcome when seating allows.
Should I get hibachi or sushi at Jinbeh?
You can have both at one table. Many guests pair a hibachi dinner with a roll or two from the sushi bar. If you want the tableside show, start with hibachi; if you want to focus on the fish, sit at the sushi bar. Either way you are getting the same kitchen and the same standards.
