Is Jinbeh's fish fresh?

Yes, Jinbeh serves fresh fish daily at both Frisco and Lewisville sushi bars. We receive deliveries from established DFW seafood suppliers most days, and our sushi chefs select cuts based on what arrives that morning. Fish is held at proper sushi-grade temperatures with strict time-since-catch tracking. We do not refreeze raw fish for service. Some specific species, most notably tuna, are flash-frozen at sea per FDA sushi-grade guidelines to neutralize parasites; this is industry standard and required for safe raw consumption. Beyond compliance, our long-tenured sushi chefs are picky about quality and will pull product that does not meet our standards. If something looks off, it does not go on a plate.

Freshness in sushi has two dimensions: how recently the fish was caught/handled, and how it has been stored. Some species like tuna are flash-frozen on the boat, this is actually safer for raw consumption than 'fresh-never-frozen' tuna because freezing kills parasites. Other species like salmon are typically farm-raised under controlled conditions and arrive chilled. Either way, the question is whether the fish has been handled properly between the boat and your plate. Jinbeh has been sourcing sushi fish for 35+ years and has established relationships with reliable DFW seafood suppliers. If you have specific questions about a fish's provenance, ask the sushi chef, they can usually tell you where it came from.
