Does Jinbeh have toro?

Toro (fatty tuna belly) is available at Jinbeh seasonally and based on what our seafood suppliers bring in that week. It is not a fixed daily menu item because true bluefin or yellowfin toro is expensive, sourced in limited quantity, and turns over quickly. When toro is available, you will often find it listed as a sushi bar special or on the daily specials card. Ask your sushi chef directly, they will know what came in that morning and whether toro (otoro, chutoro) is on the cut board. If you are planning a special occasion and specifically want toro, call ahead a day or two and we can try to reserve a portion from the next delivery.

Toro is the prized fatty cut of tuna belly, prized for its marbling and melt-in-mouth texture. Otoro (the fattiest cut) is the most expensive and rarest; chutoro (medium-fatty) is more common. Toro pricing fluctuates significantly week-to-week based on tuna market prices, so we typically price it as market or daily special rather than a fixed menu item. Pair toro with a clean junmai daiginjo sake or a glass of cold Japanese beer, the fatty richness pairs beautifully with crisp, clean drinks.
