Jinbeh does not offer a formal published omakase menu, but our sushi chefs can build a custom chef's-choice tasting experience at the sushi bar for guests who request it. Sit at the sushi bar, tell the chef you would like them to choose for you (chef's selection, chef's choice, or 'omakase' all work), set a budget range or piece count, and let them work. The result is a personalized progression of nigiri, sashimi, and rolls based on the freshest fish that day. This works best at dinner with advance notice, call ahead a day or two and we can plan the fish order around your visit. Pair with sake selected by the chef or bartender for the full experience.

Yes, Jinbeh has a full sushi program at both Frisco and Lewisville locations, with daily fresh fish, classic nigiri, sashimi, hand rolls, traditional rolls, and specialty rolls developed over decades. Many guests come to Jinbeh just for sushi without ordering hibachi at all. Sit at the sushi bar to watch our sushi chefs work, or order sushi at any dining table. Popular options include salmon nigiri, tuna sashimi, the Jinbeh roll, rainbow roll, dragon roll, and seasonal specials. Sushi is available for lunch, dinner, and takeout (through Grubhub, Uber Eats, or direct call orders). Vegetarian sushi options include cucumber, avocado, and vegetable rolls.

Jinbeh serves a rotating selection of fresh fish at our sushi bars in Frisco and Lewisville. Core selections include salmon, tuna (akami and toro when available), yellowtail (hamachi), white tuna (escolar), eel (unagi), shrimp (ebi), crab, octopus (tako), and mackerel (saba). Seasonal additions like uni, ikura, snapper, and king salmon appear when our fishmonger sources them. Fish is delivered fresh, not frozen for service. Hibachi-grilled proteins on the dinner menu include chicken, shrimp, scallops, steak, filet mignon, lobster tail, and salmon hibachi. Ask the sushi chef what looks best that day, they often have off-menu pieces from the morning's delivery.

Toro (fatty tuna belly) is available at Jinbeh seasonally and based on what our seafood suppliers bring in that week. It is not a fixed daily menu item because true bluefin or yellowfin toro is expensive, sourced in limited quantity, and turns over quickly. When toro is available, you will often find it listed as a sushi bar special or on the daily specials card. Ask your sushi chef directly, they will know what came in that morning and whether toro (otoro, chutoro) is on the cut board. If you are planning a special occasion and specifically want toro, call ahead a day or two and we can try to reserve a portion from the next delivery.

Yes, both Jinbeh locations have full sushi bar seating where you can watch our sushi chefs work and order directly from them. Sushi bar seats are popular for solo diners, couples, sushi-focused meals, and guests who want a quieter alternative to the hibachi tables. The full menu is available at the sushi bar, sushi, hibachi entrées, ramen, sake, and the full bar, so you do not have to limit yourself to just sushi. Sushi bar seats are first-come or reservable through OpenTable. They are often easier to get than hibachi tables on busy weekend nights. Sit at the bar, ask the sushi chef what is fresh that day, and pair with a glass of sake or Japanese whisky.
