What kind of fish does Jinbeh serve?
Jinbeh serves a rotating selection of fresh fish at our sushi bars in Frisco and Lewisville. Core selections include salmon, tuna (akami and toro when available), yellowtail (hamachi), white tuna (escolar), eel (unagi), shrimp (ebi), crab, octopus (tako), and mackerel (saba). Seasonal additions like uni, ikura, snapper, and king salmon appear when our fishmonger sources them. Fish is delivered fresh, not frozen for service. Hibachi-grilled proteins on the dinner menu include chicken, shrimp, scallops, steak, filet mignon, lobster tail, and salmon hibachi. Ask the sushi chef what looks best that day, they often have off-menu pieces from the morning's delivery.
Sushi quality is a function of sourcing and turnover. Jinbeh has been buying from established DFW seafood suppliers for decades, which gives us first call on premium product. Tuna, salmon, and yellowtail are the daily core. Specialty fish, toro, uni, real wagyu when available, depends on what comes in that week. If you have a fish you want and we do not see it on the menu, ask; we can sometimes accommodate. We do not serve fish we are not confident in, and any unsold portion of a delivery is rotated or repurposed. For raw fish, our team follows standard sushi-grade handling protocols including proper temperature control and time-since-catch tracking.
