Should I get hibachi or sushi at Jinbeh?

Both, ideally. Jinbeh is one of the few DFW Japanese restaurants where hibachi and sushi are equally serious: the head sushi chef has been at Jinbeh for nearly 30 years and co-created every signature roll on the menu. That is different from competitors where the sushi is an afterthought (Yelp reviewers of nearby hibachi chains commonly say things like "go for hibachi, skip sushi" or note that sushi ingredients taste old). If you want the show, get hibachi: the tableside performance, onion volcano, and signature mustard sauce define the experience. If you want quieter, slower-paced dining, sit at the sushi bar or a dining room table and order specialty rolls, sashimi, and a sake flight. Many guests do both: start with sushi appetizers at the bar, then move to the hibachi grill for the entree.

Some practical guidance. Hibachi runs 60 to 75 minutes from soup to dessert and includes Japanese onion soup, salad, hibachi vegetables, fried or steamed rice, and your protein, all cooked tableside. Sushi at the bar is faster (15 to 45 minutes) and lets you order item by item. For a first visit, the hibachi show captures the brand experience. For a return visit, the sushi bar reveals what Jinbeh's program is really capable of, including specialty rolls unique to each location, some of which have been co-created by regular guests during omakase. On the hibachi side specifically, common complaints about local competitors include "tired hibachi tricks without personality" and chefs going through the motions mechanically. Jinbeh's chefs have tenures of 10 years and more, and the Gracious Host hospitality philosophy means the performance is tailored to your table rather than scripted. The Frisco location has slightly different specialty rolls than Lewisville, so trying both locations is a small culinary adventure on its own.
