What is the onion volcano at hibachi?

The onion volcano is the signature hibachi performance trick where the chef stacks sliced onion rings into a small tower on the grill, pours oil into the center, and lights it on fire, producing a tall flame that resembles an erupting volcano. It is the visual centerpiece of the hibachi show and arguably the most-photographed moment of any hibachi meal. At Jinbeh, the onion volcano happens early in the cooking sequence as a built-in 'show-starter' before the chef begins cooking proteins. Kids especially love it. The trick has been part of hibachi tradition at our restaurants since 1988. After the flame dies down, the cooked onions are spread on the grill and become part of the meal.

The onion volcano is functionally useful in addition to being visually impressive, the flame quickly heats and slightly caramelizes the onion rings, releasing flavor that infuses the rest of the meal cooked on that grill surface. It also signals the start of the show to the table: when the volcano lights up, the meal is officially underway. Different hibachi chefs have different variations, some build taller towers, some add smoke effects, some incorporate the volcano into the egg toss or the timing of other tricks.
