The Jinbeh Story
Our seared tuna uses the same sushi-grade ahi that goes into our sashimi and rolls. The pepper-sesame crust is applied by hand, and the searing takes only seconds per side.
Origin & Tradition
Tataki-style searing (briefly searing the outside of raw fish) is a Japanese technique from Kochi prefecture. It preserves the clean flavor of the raw interior while adding a flavorful crust.
